Baking Cheddar Chowder

Hearty Cheddar Chowder

It's a family favorite.
With hubs home yesterday (work from home Monday!)
and waking to our first frost it was time to 
start a pot of our favorite fall soup for lunch:

1/2 c. carrots, sliced
3 potatoes, diced (peeled or not, your preference)
1 green pepper, diced
1 medium onion, diced

Melt 2 Tbsp. butter in medium pot over medium high heat.
Add chopped veggies and stir to coat.
Cook 5 min.
Add 2 c. chicken stock.
Turn heat to low simmer.
In a small saucepan make a white sauce using:
1/3 c. butter, melted over medium high heat.
Add
1/3 c. flour all at once stirring constantly
 while gradually adding
2 c. milk. Stir and cook over medium high heat until thick.
Add white sauce to pot with veggies and stir in 4 c. cheddar cheese. (shredded works best.)
Keep on low simmer until potatoes are tender.
Stirring ever so often making sure it doesn't stick to the bottom of the pot.

I had a 5 year old big mister helping me stir.
At one point he started stirring while singing,
"baking cheddar chowder as fast as you can!"
(to the tune of patty-cake, patty-cake!)

  1. Oh that looks so yummy! I love soup but we don't eat it that often because we're still in the "toddler doesn't know how to eat soup without dumping the bowl on the floor" stage.
