Egg Casserole (a yummy new to me casserole)

I tried making a new egg casserole recipe that I just pulled this and that together for. (and keeping true to the moma's on a health kick ingredients...) We liked it. In addition to it tasting good I really like that it doesn't have to be prepared the night before and it is just a good reheated~ xoxo

1 lb. ground turkey
1/4 c. chopped onion
1/2 tsp. ground (cayenne) red pepper
1 1/2 tsp. classic yellow mustard
1/4 tsp. pepper
1 c. shredded colby jack cheese
1 c. fresh baby spinach
4 oz. sliced mushrooms
12 eggs
1 1/2 c. milk
1/2 tsp. salt

In a skillet cook ground turkey, onion, red pepper, yellow mustard and pepper until meat is no longer pink.  Remove from heat, stir in cheese until melted. Add mushrooms (I chop mine) and spinach. Mix. Place mixture in 9X13. In a medium bowl beat eggs, milk and salt until well mixed. Pour over turkey mixture. Bake at 350 degrees for about 30 min. or until eggs have set.
